Apple Hand Pies

This past fall, we had our very first little homeschool group study. We spent it learning about apples with friends. The kids and I made these little apple hand pies for snack time and they were just scrumptious!

Crust

Whisk together 2 cups all purpose flour, 1/2 tsp salt, 3/4 tsp baking powder, and 1.5 tbsp sugar.

Cut in 1 cup cubed cold butter, with a fork or pastry cutter, until it's a coarse meal. Stir in 1/2 cup sour cream with a spatula and use your hands to turn it out onto a floured surface, kneading it altogether.

Roll the dough together and wrap in saran wrap. Refrigerate for at least an hour.

Apple Pie Filling

Peel and core 4 apples (I used honey crisp). Dice them into tiny pieces and set aside.

Melt 3 tbsp butter in a large skillet over medium heat. Allow the butter to brown into a light golden color; about 1 minute.

Add apples into hot butter; sprinkle with 1:4 tsp salt, 1/4 cup brown sugar, and 1/4 cup granulated sugar. Cook until apples are completely softened, about 5 minutes. Mix in 2 tsp apple pie spice and 2 tbsp lemon juice and cook another 2 minutes. Sprinkle 2 tbsp flour on top and mix well, allowing mixture to thicken, for 2 minutes. Remove from heat and let cool for at least 15 minutes. 

Assembly

Preheat oven to 425°F.

Roll the dough out into a 18" x 18" square. Use cookie cutters or simply a knife to cut out shapes. 


Divide the apple filling among 8 of the squares, using about 1 heaping tablespoon for each. Brush some of a beaten egg along the edges of each filled square.

Cut a vent into each of the remaining eight squares. Top each filled square with a vented square, and press along the edges with the tines of a fork to seal.

Brush the top of each pie with the remaining beaten egg, and sprinkle with sparkling sugar if you like.

Transfer the pies to a prepared baking sheet. Bake the pies for 15 to 18 minutes, or until crust is golden brown and filling is bubbling. Remove from oven and let sit for 10 minutes before serving.
